Strawberry Lemon Overnight Oats

Spring in a jar! These are bright, refreshing, and packed with fiber to keep your gut happy. Perfect for busy mornings—just prep the night before and wake up to sunshine in a spoon


Ingredients

  • ½ cup gluten-free rolled oats
  • 1 tbsp chia seeds
  • ¾ cup unsweetened almond milk (or any milk)
  • ¼ cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ½ tsp vanilla extract
  • Zest of ½ lemon
  • 1–2 tsp maple syrup or raw honey (optional)
  • ½ cup fresh strawberries, chopped
Optional Gut-Boost Add-ins
  • 1 tbsp flaxseed meal
  • A sprinkle of hemp hearts or chopped walnuts for topping

Instructions

  1. In a jar or container, mix oats, chia seeds, milk, yogurt, vanilla, lemon zest, and sweetener if using.
  2. Stir in the chopped strawberries.
  3. Cover and refrigerate overnight (or at least 4–6 hours).
  4. In the morning, give it a good stir and top with fresh berries, a little lemon zest, and nuts or seeds if you like some crunch!
