Strawberry Lemon Overnight Oats
Spring in a jar! These are bright, refreshing, and packed with fiber to keep your gut happy. Perfect for busy mornings—just prep the night before and wake up to sunshine in a spoon
Ingredients
- ½ cup gluten-free rolled oats
- 1 tbsp chia seeds
- ¾ cup unsweetened almond milk (or any milk)
- ¼ cup plain Greek yogurt (or coconut yogurt for dairy-free)
- ½ tsp vanilla extract
- Zest of ½ lemon
- 1–2 tsp maple syrup or raw honey (optional)
- ½ cup fresh strawberries, chopped
Optional Gut-Boost Add-ins
- 1 tbsp flaxseed meal
- A sprinkle of hemp hearts or chopped walnuts for topping
Instructions
- In a jar or container, mix oats, chia seeds, milk, yogurt, vanilla, lemon zest, and sweetener if using.
- Stir in the chopped strawberries.
- Cover and refrigerate overnight (or at least 4–6 hours).
- In the morning, give it a good stir and top with fresh berries, a little lemon zest, and nuts or seeds if you like some crunch!
