Blueberry Lemon Cheesecake Overnight Oats
These oats are creamy, tangy, sweet, and packed with good-for-you ingredients.
Ingredients
For the Base
- 2 cups gluten-free rolled oats
- 1/3 cup cream cheese
- 1/3 cup plain yogurt (I use coconut yogurt but any plain kind works)
- 1 1/2 cups almond milk
- Juice of 1 lemon
- 2 tbsp maple syrup
- 3 tbsp chia seeds
To Add in the Morning
- Fresh blueberries
- Zest of 1 lemon
- Crushed Simple Mills Lemon Sweet Thins
- 5 jars or containers
Instructions
- Mix all base ingredients together in a bowl, cover, and refrigerate overnight.
- In the morning: Add about 1/4 cup oat mixture.
- Top with blueberries + lemon zest.
- Add a layer of sweet thin crumbles.
- Repeat for a second layer!
