A meaty, cheesy dip made from real ingredients. Bound to be a crowd pleaser. It keeps well in a slow cooker so you can feed guests all day long.

Cowboy Queso
A meaty, cheesy dip made from real ingredients. Bound to be a crowd pleaser. It keeps well in a slow cooker so you can feed guests all day long.
Ingredients
- 1 lb grass fed ground beef
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- ½ tsp cumin
- 1 tsp chili powder
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, diced (seeds removed for less heat)
- 1 can fire roasted diced tomatoes
- 1 can black beans, drained and rinsed
- 8 oz block of raw cheddar, shredded
- 1 cup cottage cheese
- 1 cup milk of choice
- ¼ cup fresh cilantro, chopped
- 1 tbsp lime juice
Instructions
- In a skillet over medium heat, brown the ground beef with salt, pepper, paprika, cumin, and chili powder.
- Add diced onion and jalapeño, cooking until softened (about 5 minutes). Add garlic and cook for one more minute.
- Lower heat to medium-low and stir in diced tomatoes and black beans.
- Add the shredded cheese, cottage cheese and milk, stirring constantly until melted and smooth. It may take some time to thicken. Be patient!
- Top with fresh cilantro, and lime juice for extra flavor.
- Transfer to a serving dish or small slow cooker to keep warm.
- Garnish with extra cilantro and serve with tortilla chips, veggies, or gluten-free crackers.
Notes
NOTE- if the queso is too runny, add more cottage cheese
