Ingredients
For the Cookies
- 1 ½ cups Mightylicious gluten-free flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp cinnamon
- Pinch of sea salt
- ½ cup grass-fed butter (softened) or coconut oil
- ½ cup coconut sugar (or organic cane sugar)
- 1 large egg
- 1 tsp vanilla extract
For the Apple Filling
- 1 medium apple (peeled & finely diced)
- 1 tsp coconut oil or butter
- 1 Tbsp maple syrup
- ½ tsp cinnamon
- Pinch of nutmeg
Optional Glaze
- ½ cup powdered coconut sugar (or organic powdered sugar)
- 1–2 tsp almond milk
Instructions
- Make the filling – In a skillet, sauté diced apple with coconut oil, maple syrup, cinnamon, and nutmeg over medium heat until softened (5–6 minutes). Let cool.
- Prepare cookie dough – In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, beat butter and coconut sugar until creamy. Mix in egg and vanilla. Slowly add dry ingredients until combined.
- Shape – Scoop dough onto a parchment-lined baking sheet (about 2 Tbsp each). Use your thumb or the back of a spoon to press an indent in the center of each cookie.
- Fill & bake – Spoon a little apple filling into the center of each cookie. Bake at 350°F (175°C) for 10–12 minutes, until edges are golden.
- Optional glaze – Whisk powdered sugar with almond milk until smooth. Drizzle over cooled cookies.
