Ingredients

  • 1 lb grass-fed ground beef
  • 1 large or 2 small sweet potatoes, peeled and cubed
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper (red or orange), diced
  • 2 handfuls of baby spinach
  • 1 tbsp olive oil or avocado oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • goat cheese (optional)
  • balsamic reduction/glaze

Instructions

  1. Heat 1 tbsp oil in a large skillet over medium heat.
  2. Add the cubed sweet potatoes, smoked paprika, cumin, and cinnamon. Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender. If needed, add a splash of water or broth to prevent sticking.
  3. Move sweet potatoes to the edges of the skillet. Add the ground beef, season with salt and pepper, and cook until browned.
  4. In the same skillet, add the onion, garlic, and bell pepper. Sauté for 3-4 minutes until soft.
  5. Stir in the baby spinach until wilted (about 1 minute).
  6. Serve skillet contents in a shallow bowl and crumble goat cheese on top. Drizzle with balsamic reduction
