Ingredients
- 1 lb grass-fed ground beef
- 1 large or 2 small sweet potatoes, peeled and cubed
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 bell pepper (red or orange), diced
- 2 handfuls of baby spinach
- 1 tbsp olive oil or avocado oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Instructions
- Heat 1 tbsp oil in a large skillet over medium heat.
- Add the cubed sweet potatoes, smoked paprika, cumin, and cinnamon. Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender. If needed, add a splash of water or broth to prevent sticking.
- Move sweet potatoes to the edges of the skillet. Add the ground beef, season with salt and pepper, and cook until browned.
- In the same skillet, add the onion, garlic, and bell pepper. Sauté for 3-4 minutes until soft.
- Stir in the baby spinach until wilted (about 1 minute).
- Serve skillet contents in a shallow bowl and crumble goat cheese on top. Drizzle with balsamic reduction
