High Fiber Winter Glow Salad
This salad is a clean, gluten-free and dairy-free recipe designed to support gut health and balanced blood sugar. Made with whole food ingredients and protein-rich toppings, it’s a satisfying winter salad that keeps you full and energized.
Ingredients
For the Salad
- 1 head Tuscan kale, de-stemmed + chopped
- 1 cup shredded Brussels sprouts
- 1 cup roasted sweet potato cubes
- ½ cup pomegranate seeds
- 1 orange, peeled + sliced
- 1 avocado, diced
- ¼ cup pecans or walnuts, toasted + chopped
- 2 tbsp pumpkin seeds (pepitas)
- 2 tbsp hemp seeds
- Roasted chicken breasts
For the Dressing
- 3 tbsp olive oil
- 1 ½ tbsp apple cider vinegar
- 1 tbsp orange juice (fresh squeezed from the salad orange)
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- Salt + pepper
- Optional: 1 tsp grated ginger
Instructions
- Roast the sweet potatoes and chicken. Toss cubes with a little oil, salt, and pepper. Season chicken with salt, pepper and paprika. Roast at 425°F for 20–25 minutes.
- Massage the kale. Add chopped kale to a large bowl. Drizzle with 1 tsp olive oil + a pinch of salt and massage 20–30 seconds until softened.
- Make the dressing. Whisk olive oil, ACV, orange juice, Dijon, honey, salt, pepper, and ginger (if using).
- Build the salad. Layer kale, Brussels sprouts, orange slices, pomegranate, nuts, and avocado. Top with chicken and sweet potatoes. Pour dressing over the greens and toss well.
