Ingredients
Spiced Ground Beef
- 1½ lb grass-fed ground beef
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 3 garlic cloves, minced
- 1½ tsp cumin
- 1 tsp smoked paprika
- 1 tsp cinnamon
- ½ tsp ground coriander
- ½ tsp salt
- ¼ tsp black pepper
Roasted Sweet Potatoes
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- ½ tsp paprika
- Pinch salt
Lemon Yogurt Sauce
- ¾ cup plain Greek yogurt
- Zest of 1 lemon
- 1½ tbsp lemon juice
- 1 tbsp olive oil
- Pinch salt
Optional Toppings
- Fresh parsley or cilantro
- Pomegranate seeds
- Sliced cucumber or arugula
Instructions
- Roast sweet potatoes at 425°F with olive oil, paprika, and salt for 25–30 minutes until caramelized.
- Heat olive oil in a large skillet over medium heat. Sauté onion until soft (3–4 minutes).
- Add garlic and spices, toast for 30 seconds until fragrant.
- Add ground beef, breaking it up, and cook until browned.
- Lower heat slightly and let beef simmer 2–3 minutes so the spices really bloom.
- Stir lemon yogurt ingredients until smooth.
- Build bowls: sweet potatoes → spiced beef → yogurt drizzle → toppings.
