Saucy Moroccan-Inspired Ground Beef Bowls with Roasted Sweet Potatoes & Lemon Yogurt

These bowls are a fast, flavor-packed weeknight dinner made with whole food ingredients and bold warming spices. Ingredients

Spiced Ground Beef
  • 1½ lb grass-fed ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1½ tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp cinnamon
  • ½ tsp ground coriander
  • ½ tsp salt
  • ¼ tsp black pepper
Roasted Sweet Potatoes
  • 2 medium sweet potatoes, diced
  • 1 tbsp olive oil
  • ½ tsp paprika
  • Pinch salt
Lemon Yogurt Sauce
  • ¾ cup plain Greek yogurt
  • Zest of 1 lemon
  • 1½ tbsp lemon juice
  • 1 tbsp olive oil
  • Pinch salt
Optional Toppings
  • Fresh parsley or cilantro
  • Pomegranate seeds
  • Sliced cucumber or arugula

Instructions

  1. Roast sweet potatoes at 425°F with olive oil, paprika, and salt for 25–30 minutes until caramelized.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion until soft (3–4 minutes).
  3. Add garlic and spices, toast for 30 seconds until fragrant.
  4. Add ground beef, breaking it up, and cook until browned.
  5. Lower heat slightly and let beef simmer 2–3 minutes so the spices really bloom.
  6. Stir lemon yogurt ingredients until smooth.
  7. Build bowls: sweet potatoes → spiced beef → yogurt drizzle → toppings.
