Ingredients
Chicken
- 1½ lb chicken breasts or thighs, cubed
- 1 tbsp olive oil
- 1 tsp turmeric
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp ground ginger
- ½ tsp salt
Crispy Potatoes
- 1½ lb baby gold potatoes, halved
- 1½ tbsp olive oil
- ½ tsp salt
- ½ tsp paprika
Coconut Lemon Sauce
- ¾ cup full-fat coconut milk
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove
- Pinch salt
Herby Green Drizzle
- 1 cup fresh herbs (parsley + cilantro or basil)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp water
- Pinch salt
Instructions
- Roast potatoes at 425°F with olive oil, salt, and paprika for 30–35 minutes, flipping once.
- Toss chicken with olive oil and spices.
- Heat a large skillet over medium-high and sear chicken until golden and cooked through (about 6–8 minutes).
- Blend coconut lemon sauce until smooth.
- Add sauce to the pan with chicken and simmer 2–3 minutes until slightly thickened.
- Blend green drizzle ingredients until vibrant and pourable.
- Build bowls: potatoes → saucy chicken → green drizzle.
