Golden Coconut Chicken Bowls

Ingredients

Chicken
  • 1½ lb chicken breasts or thighs, cubed
  • 1 tbsp olive oil
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground ginger
  • ½ tsp salt
Crispy Potatoes
  • 1½ lb baby gold potatoes, halved
  • 1½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp paprika
Coconut Lemon Sauce
  • ¾ cup full-fat coconut milk
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove
  • Pinch salt
Herby Green Drizzle
  • 1 cup fresh herbs (parsley + cilantro or basil)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp water
  • Pinch salt

Instructions

  1. Roast potatoes at 425°F with olive oil, salt, and paprika for 30–35 minutes, flipping once.
  2. Toss chicken with olive oil and spices.
  3. Heat a large skillet over medium-high and sear chicken until golden and cooked through (about 6–8 minutes).
  4. Blend coconut lemon sauce until smooth.
  5. Add sauce to the pan with chicken and simmer 2–3 minutes until slightly thickened.
  6. Blend green drizzle ingredients until vibrant and pourable.
  7. Build bowls: potatoes → saucy chicken → green drizzle.
