One Pan Creamy Harissa Lamb and Sweet Potato Skillet

This is a must try for one pan meal lovers. Savory lamb, naturally sweet roasted sweet potatoes, and a creamy spiced harissa sauce create a gluten-free, high-protein dinner that is comforting, flavorful, and perfect for clean eating and whole food cooking.

Ingredients

  • 1 lb ground lamb
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3–4 cloves garlic, minced
  • 1 large sweet potato, peeled and cut into small cubes
  • 1–2 tbsp harissa paste (adjust to heat preference)
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Pinch of cinnamon
  • Salt + black pepper, to taste
  • ¾ cup chicken broth
  • ¾ cup full-fat coconut milk
  • 2 cups baby spinach or chopped kale
  • Fresh parsley or cilantro, for garnish
  • Optional finish: squeeze of lemon
  • green vegetable side of choice- prepared as you wish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground lamb and season with salt and pepper. Cook, breaking it up, until browned. Remove lamb and set aside.
  2. In the same skillet, add onion and cook until soft, about 3–4 minutes. Stir in garlic, harissa, smoked paprika, cumin, and cinnamon. Cook until fragrant.
  3. Add sweet potatoes and toss to coat in the spices. Pour in chicken broth, cover, and simmer 8–10 minutes until sweet potatoes are just tender.
  4. Stir in coconut milk and return the lamb to the skillet. Simmer uncovered 5–7 minutes until the sauce thickens and everything is cooked through.
  5. Fold in spinach until wilted. Taste and adjust seasoning. (I skipped this in mine because my spinach went bad 😫)
  6. Finish with fresh herbs and a squeeze of lemon if desired.
