Ingredients
- 3 medium zucchini, sliced thin lengthwise
- 2 cups shredded cooked chicken
- 1 large yellow onion, thinly sliced
- 1 tbsp olive oil
- 1 ½ cups full-fat cottage cheese
- ½ cup freshly grated parmesan
- 1 egg
- 1 tsp dried thyme
- Salt + pepper
- 1 ½ cups shredded mozzarella
- Handful fresh spinach (roughly chopped)
Instructions
- Caramelize the Onions. Cook in olive oil on medium-low 15–20 minutes until deeply golden.
- Make the Cream Layer. Blend: Cottage cheese, Parmesan, Egg, Thyme, Salt + pepper until smooth and creamy.
- In a greased baking dish: Layer 1: Thin smear of cream mixture. Layer 2: Overlapping zucchini slices Layer. 3: Shredded chicken Layer. 4: Spinach + caramelized onions. Layer 5: Cream mixture. Layer 6: Mozzarella. Repeat 2–3 times. Finish with mozzarella on top.
- Bake at 375°F for 35–40 minutes. Broil last 3–5 minutes for golden top. Let it rest 15 minutes before slicing. This is crucial for clean cuts. Also- use a paper towel to soak up any access water/juice that may have accumulated on the sides of the dish.
