One Pot Lemon Ricotta Chicken with Spring Greens and Orzo

This clean eating lemon ricotta chicken and orzo is a one pot healthy dinner made with simple, real food ingredients like fresh lemon, leafy greens, and tender chicken. It’s an easy Whole Foods recipe that feels comforting while still light, fresh and nutritious.


Ingredients

  • 1 lb boneless skinless chicken thighs (or breasts)
  • 1 tbsp olive oil
  • Salt + pepper
  • 3 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 cup orzo (gluten-free)
  • 2 cups chicken bone broth
  • Zest + juice of 1 lemon
  • ½ cup whole milk ricotta
  • ½ cup freshly grated parmesan
  • 1 cup chopped asparagus
  • 1–2 handfuls baby spinach
  • Fresh basil or parsley

Instructions

  1. Season chicken with salt + pepper.
  2. Sear in olive oil until golden (about 4–5 min per side). Remove and set aside.
  3. In same pot, sauté shallot + garlic (30 seconds). Add orzo + broth + lemon zest. Stir.
  4. Nestle chicken back in. Cover and simmer 10–12 minutes until orzo is tender.
  5. Stir in: Ricotta, Parmesan, Lemon juice and Asparagus. Simmer 2–3 more minutes.
  6. Fold in spinach until wilted. Finish with fresh herbs + cracked pepper.
