Ingredients

  • 2–3 medium sweet potatoes
  • 1 lb ground grass-fed beef or bison
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Salt + pepper
  • ½ cup shredded raw cheddar
  • 1 avocado
  • Fresh cilantro
  • Lime

Instructions

  1. Roast whole sweet potatoes at 425°F for ~35–40 min until soft.
  2. Cook ground beef with olive oil + spices.
  3. Smash sweet potatoes on a sheet pan (press flat with bottom of glass).
  4. Drizzle lightly with olive oil + salt.
  5. Top with taco meat + cheese.
  6. Broil 3–5 minutes until cheese bubbles and edges crisp.
  7. Finish with avocado, lime and cilantro
