Ingredients

For the Skillet
  • 1 lb boneless skinless chicken thighs or breasts
  • 1 lb baby potatoes, cut into tiny pieces
  • 1 bunch asparagus, trimmed
  • 1 cup snap peas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • zest of 1 lemon
Green Goddess Gut Healthy Sauce
  • ½ cup plain yogurt
  • 1 cup fresh herbs (parsley + basil + dill)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 small garlic clove
  • 1 tablespoon capers
  • pinch salt
Optional Toppings
  • avocado
  • pickled red onions
  • microgreens or arugula

Instructions

  1. Blend all sauce ingredients until smooth.
  2. Heat a large skillet with olive oil. Add potatoes and cook until crispy and golden (about 8–10 minutes).
  3. Push potatoes to the side and add chicken. Season with garlic powder, salt, and pepper. Cook until golden and cooked through.
  4. Toss in asparagus and snap peas. Cook 3–4 minutes until bright green but still crisp.
  5. Finish with lemon zest.
  6. Serve in bowls and drizzle generously with the green goddess sauce.
