Ingredients
For the Skillet
- 1 lb boneless skinless chicken thighs or breasts
- 1 lb baby potatoes, cut into tiny pieces
- 1 bunch asparagus, trimmed
- 1 cup snap peas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- zest of 1 lemon
Green Goddess Gut Healthy Sauce
- ½ cup plain yogurt
- 1 cup fresh herbs (parsley + basil + dill)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 small garlic clove
- 1 tablespoon capers
- pinch salt
Optional Toppings
- avocado
- pickled red onions
- microgreens or arugula
Instructions
- Blend all sauce ingredients until smooth.
- Heat a large skillet with olive oil. Add potatoes and cook until crispy and golden (about 8–10 minutes).
- Push potatoes to the side and add chicken. Season with garlic powder, salt, and pepper. Cook until golden and cooked through.
- Toss in asparagus and snap peas. Cook 3–4 minutes until bright green but still crisp.
- Finish with lemon zest.
- Serve in bowls and drizzle generously with the green goddess sauce.
