Apple Gouda Sausage and Sweet Potato Hash w Asparagus
A hearty, one-skillet meal made with sweet apple gouda sausage, tender sweet potatoes and crisp asparagus. This gut-friendly dish is naturally gluten-free and perfect for a nourishing, easy weeknight dinner.
Ingredients
- 1 tbsp olive oil or ghee
- 1 medium sweet potato, diced small
- ½ tsp sea salt
- ¼ tsp black pepper
- ½ tsp smoked paprika
- ½ small onion, diced
- 1 apple Gouda sausage, sliced into rounds
- ½ tsp ground cinnamon
- 2 cups mixed greens or spinach
- 2 eggs (optional, for topping)
- 1 tbsp chopped fresh parsley (optional, for garnish)
- 1 bunch asparagus
Instructions
- Toss asparagus with a drizzle of oil, salt and pepper. Bake at 400° for 10 minutes.
- Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes, salt, pepper, and smoked paprika. Cook for 10-12 minutes, stirring occasionally, until fork-tender (add some water if they start to char or feel dry).
- Push the sweet potatoes to one side of the skillet. Add the diced onion and sausage slices. Cook for 4-5 minutes, stirring occasionally, until the onions soften and the sausage starts to brown.
- Stir in the cinnamon and mixed greens or spinach . Cook for 1-2 minutes until wilted.
- If using, cook eggs in a separate pan or make space in the skillet and fry them to your preference.
- Divide the hash into bowls, top with eggs, lay asparagus on the side and sprinkle with fresh parsley.
