Chicken Burrito Bowls

These protein-packed bowls are loaded with beans, corn and creamy avocado for a fiber rich meal that is oh so satisfying. Finished with a zesty Greek yogurt lime dressing, they’re a fresh and healthy take on a takeout fave.


Ingredients

For the Chicken
  • 1 lb shredded chicken breast
  • ½ cup chicken bone broth
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp sea salt
  • Juice of 1 lime
For the Base
  • 2 cups cooked cilantro lime cauliflower rice (or regular rice/quinoa)
  • 1 cup greens
Toppings
  • 1 cup black beans or pinto beans (rinsed & drained)
  • 1 avocado, sliced
  • ½ cup corn
  • pickled red onions
  • ¼ cup fresh cilantro, chopped
  • Lime wedges, for serving
Dressing
  • ¼ cup Greek yogurt or dairy-free yogurt
  • 1 tbsp lime juice
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ¼ tsp sea salt

Instructions

  1. In a stand mixer, add cooked chicken, chicken broth, tomato paste, smoked paprika, cumin, garlic powder, onion powder, and sea salt. Use the paddle attachment to shred the chicken, while all the other ingredients mix in. Finish with lime juice.
  2. Divide cilantro lime rice and greens into bowls. Top with shredded chicken, black beans, avocado, corn, pickled onions, and cilantro.
  3. Whisk together yogurt, lime juice, garlic powder, cumin, and salt. Drizzle over bowls or serve on the side.
  4. Add fresh jalapeño slices and extra lime wedges for brightness.
