This Tex-Mex sloppy joe bowl swaps the bun for spiralized zucchini and cauliflower rice, keeping it light and nutrient dense. Bold, saucy, and satisfying- it’s a gut friendly spin on a classic comfort food.
Ingredients
For the Sloppy Joe Meat
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 small red bell pepper, diced
- 3 cloves garlic, minced
- 1 (8 oz) can tomato sauce
- 2 tbsp tomato paste
- 1 tbsp liquid or coconut aminos
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- ½ tsp sea salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper (optional)
For the Bowl Base
- cooked quinoa, brown rice, or cauliflower rice
- 1 small zucchini, spiralized or shredded (option

- Sliced green onions
- Sliced avocado
- Fresh cilantro
- grain-free tortilla chips (for crunch)
Instructions
For the Bowl Base
- Add onion and bell pepper to a skillet with oil. Cook for 3-4 minutes until softened. Add garlic and cook one more minute.
- Add ground beef, breaking it up as it cooks. Once browned, stir in tomato sauce, tomato paste, liquid/coconut aminos, apple cider vinegar, Dijon mustard, smoked paprika, salt, pepper, and cayenne (if using). Let simmer for 5 minutes until thickened.
- Divide the base (quinoa, rice, or cauliflower rice) into bowls. Place shredded zucchini in your bowl and spoon sloppy Joe mixture over the top.
- Garnish with green onions, avocado, cilantro, and chips for crunch.
