This Tex-Mex sloppy joe bowl swaps the bun for spiralized zucchini and cauliflower rice, keeping it light and nutrient dense. Bold, saucy, and satisfying- it’s a gut friendly spin on a classic comfort food.


Ingredients

For the Sloppy Joe Meat
  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (8 oz) can tomato sauce
  • 2 tbsp tomato paste
  • 1 tbsp liquid or coconut aminos
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
For the Bowl Base
  • cooked quinoa, brown rice, or cauliflower rice
  • 1 small zucchini, spiralized or shredded (option
Toppings
  • Sliced green onions
  • Sliced avocado
  • Fresh cilantro
  • grain-free tortilla chips (for crunch)

Instructions

For the Bowl Base
  1. Add onion and bell pepper to a skillet with oil. Cook for 3-4 minutes until softened. Add garlic and cook one more minute.
  2. Add ground beef, breaking it up as it cooks. Once browned, stir in tomato sauce, tomato paste, liquid/coconut aminos, apple cider vinegar, Dijon mustard, smoked paprika, salt, pepper, and cayenne (if using). Let simmer for 5 minutes until thickened.
  3. Divide the base (quinoa, rice, or cauliflower rice) into bowls. Place shredded zucchini in your bowl and spoon sloppy Joe mixture over the top.
  4. Garnish with green onions, avocado, cilantro, and chips for crunch.
