One Skillet Turkey and Zucchini Taco Hash

This one skillet meal is packed with flavor thanks to smoky spices, sweet corn and bright lime. It’s gluten free, dairy optional and totally customizable.


Ingredients

  • 1 lb ground turkey
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup corn (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp ancho chili powder
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional: chopped cilantro, avocado slices, or a drizzle of plain Greek yogurt or dairy-free alternative

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook for 2–3 minutes until softened.
  2. Add garlic and ground turkey. Season with cumin, paprika, ancho, chili powder, salt, and pepper. Cook until browned, breaking up the meat as it cooks.
  3. Stir in zucchini, bell pepper, and corn. Cook for 5–7 minutes until veggies are tender.
  4. Squeeze lime juice over the top and stir in fresh cilantro if using.
  5. Serve as-is, or top with avocado and a dollop of yogurt for a creamy finish.
