Citrus Beet and Goat Cheese Salad with Herb Crusted Chicken

Sweet beets, bright citrus, creamy goat cheese and herb crusted chicken for protein. This salad is refreshing, satisfying, and packed with gut friendly ingredients.


Ingredients

For the Salad
  • 4 medium roasted or boiled beets, sliced (red or golden)
  • 1 orange, peeled and sliced into rounds or segments
  • 1 grapefruit, peeled and segmented
  • 4 cups mixed greens
  • goat cheese, crumbled
  • 1/4 cup roasted pistachios or walnuts
  • 1/4 small red onion, very thinly sliced
For the Herb Crusted Chicken
  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp fresh orange juice
  • 1 tbsp apple cider vinegar
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Boil beets in water until they are tender.
  2. Mix olive oil, Dijon, thyme, oregano, garlic powder, salt, and pepper in a bowl. Rub mixture all over chicken breasts.
  3. Sear in a skillet over medium heat for 6–7 minutes per side or until cooked through. Let rest, then slice.
  4. Whisk together olive oil, orange juice, ACV, honey/maple, salt, and pepper to make the dressing.
  5. Layer greens, sliced beets, citrus, onion, and nuts. Top with sliced chicken and crumbled goat cheese. Drizzle with dressing and finish with cracked black pepper.
