One Pot Southwest Ground Beef Skillet

A quick and hearty dinner packed with bold spices, black beans, veggies and tender beef. It’s a wholesome gluten free meal that comes together fast- perfect for busy weeknights and taco lovers.


Ingredients

  • 1 lb grass-fed ground beef
  • cauliflower rice (or regular rice)
  • 1 tbsp avocado oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 1 zucchini, chopped
  • 1 can black beans
  • 1 cup corn
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 cup salsa (no sugar added)
  • Optional: fresh cilantro, avocado, lime wedges, shredded cheese

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion, and sauté until soft (2–3 mins). Add garlic and cook another minute. Mmmmm
  2. Add ground beef and cook until browned, breaking it up with a spatula. Add cumin, chili powder, paprika, salt, and pepper. Stir well to coat.
  3. Stir in bell pepper, zucchini, beans, and corn. Cook for 5–7 minutes, until veggies are tender.
  4. Pour in the salsa, mix everything together, and simmer for 3–5 more minutes until warmed through.
  5. Top with fresh cilantro, avocado slices, and a squeeze of lime. Serve as-is or over cauliflower rice, rice, or lettuce wraps!
