One Pot Southwest Ground Beef Skillet
A quick and hearty dinner packed with bold spices, black beans, veggies and tender beef. It’s a wholesome gluten free meal that comes together fast- perfect for busy weeknights and taco lovers.
Ingredients
- 1 lb grass-fed ground beef
- cauliflower rice (or regular rice)
- 1 tbsp avocado oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped (any color)
- 1 zucchini, chopped
- 1 can black beans
- 1 cup corn
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 cup salsa (no sugar added)
- Optional: fresh cilantro, avocado, lime wedges, shredded cheese
Instructions
- Heat oil in a large skillet over medium heat. Add onion, and sauté until soft (2–3 mins). Add garlic and cook another minute. Mmmmm
- Add ground beef and cook until browned, breaking it up with a spatula. Add cumin, chili powder, paprika, salt, and pepper. Stir well to coat.
- Stir in bell pepper, zucchini, beans, and corn. Cook for 5–7 minutes, until veggies are tender.
- Pour in the salsa, mix everything together, and simmer for 3–5 more minutes until warmed through.
- Top with fresh cilantro, avocado slices, and a squeeze of lime. Serve as-is or over cauliflower rice, rice, or lettuce wraps!
