Chipotle Turkey Burger Bowls
Spicy and saucy burgers that come with the crispiest sweet potato fries- baked not fried.
Ingredients
For the Sweet Potato Fries
- 2 sweet potatoes, cut into fries
- 1–2 tbsp avocado oil
- Salt, pepper, garlic powder (to taste)
- 2 tbsp nutritional yeast (optional)
- 1 tbsp arrowroot powder
For the Turkey Burgers
- 1 lb ground turkey
- ½ onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp chipotle chili powder
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
For the Chipotle Mayo
- ½ cup paleo mayo
- Juice of 1 lime
- ¼ tsp garlic powder
- ¼ tsp chipotle powder
- Cayenne pepper, to taste
- Salt and pepper, to taste
For Serving
- Spring greens
- Sliced avocado
- Crumbled feta (optional)
Instructions
- Soak cut sweet potatoes in cold water for 1 hour (this helps make them crispier).Drain and pat them dry with a clean towel.
- Toss fries with avocado oil, salt, pepper, garlic powder, and nutritional yeast (if using). Sprinkle arrowroot powder evenly over the fries and toss to coat. Spread on a baking sheet in a single layer. Bake at 400°F for 45 minutes, flipping halfway through.
- In a large bowl, mix the turkey, onion, garlic, chipotle powder, paprika, cumin, salt, and pepper until well combined. Form into 4 burger patties.
- Heat a skillet over medium heat with a little oil and cook burgers for 4–5 minutes per side, or until fully cooked.
- In a small bowl, whisk together mayo, lime juice, garlic powder, chipotle powder, cayenne, salt, and pepper. Taste and adjust seasoning if needed.
- In each bowl, layer spring greens, a burger patty, sliced avocado, sweet potato fries, a drizzle of chipotle mayo, and crumbled feta on top if desired.
