A high-protein, gluten- free meal prep made with simple whole-food ingredients. Perfect for healthy lunches or dinners, they’re nourishing, gut-friendly, and easy to make ahead for the week.
Ingredients
Turkey Meatballs
- 1 lb ground turkey
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- ½ tsp sea salt
- ¼ tsp black pepper
Lemon Herb Yogurt Sauce
- ½ cup plain skyr or whole-milk yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp finely chopped dill or parsley
- Pinch of salt
Instructions
- In a bowl, mix turkey, egg, garlic, parsley, oregano, salt, and pepper just until combined. Roll into golf-ball–sized meatballs.
- Place on a lined sheet, brush lightly with olive oil, and bake at 400°F for 18–22 minutes.
- Stir yogurt, lemon juice, olive oil, herbs, and salt until smooth.
- Store meatballs, and yogurt dip in the refrigerator in separate containers until ready to eat. You can warm them up or eat them cold if you’re on the run like me.
