Creamy Tomato Beef “Spaghetti” over Cauliflower Mash

Ingredients

  • 1 lb grass-fed ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 1 cup beef broth
  • 1½ cups chopped zucchini
  • ½ cup full-fat coconut milk or heavy cream
  • Fresh basil or parsley, to finish
For Serving
  • mashed cauliflower (or Gf pasta if you wish)

Instructions

  1. Heat olive oil in a large deep skillet or Dutch oven over medium heat.Add onion and cook until soft (3–4 minutes).
  2. Add garlic, Italian seasoning, paprika, salt, and pepper — stir until fragrant.
  3. Add ground beef and brown, breaking it up as it cooks.
  4. Stir in tomato paste and let it cook into the beef for 1 minute (key flavor step).
  5. Pour in crushed tomatoes and broth. Simmer 10–12 minutes.
  6. Stir in zucchini and coconut milk. Simmer 3–5 more minutes until creamy.
  7. Finish with fresh herbs and adjust seasoning. Serve over mashed cauliflower (or GF pasta of choice).
