Crispy Hot Honey Chicken with Creamy Whipped Feta & Roasted Veggies

Crispy, golden chicken drizzled with a sticky hot honey glaze, served over creamy whipped feta and a colorful medley of roasted vegetables. Ingredients

Chicken
  • 1½ lb chicken thighs (or breasts, pounded slightly)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
Veggies
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tbsp olive oil
  • Pinch salt
Hot Honey
  • ⅓ cup raw honey
  • 1–2 tsp chili flakes (adjust to heat preference)
  • 1 tbsp apple cider vinega
Whipped Feta
  • 5 oz feta cheese
  • ½ cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1 small garlic clove
  • Squeeze of lemon

Instructions

  1. Preheat oven to 425°F. Toss chicken with olive oil and spices. Place on a large sheet pan.
  2. Toss veggies with olive oil and salt and arrange around the chicken.
  3. Roast for 22–25 minutes, flipping chicken once for even browning.
  4. Meanwhile, warm honey + chili flakes + ACV in a small saucepan for 2–3 minutes (or microwave).
  5. Blend all whipped feta ingredients until smooth and fluffy. Be patient! This might take several minutes.
  6. Remove pan from oven, drizzle hot honey generously over chicken, return to oven for 5 more minutes.
  7. Serve chicken over whipped feta, spoon pan juices on top, finish with herbs if desired.
