Ingredients
Chicken
- 1½ lb chicken thighs (or breasts, pounded slightly)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Veggies
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 1 tbsp olive oil
- Pinch salt
Hot Honey
- ⅓ cup raw honey
- 1–2 tsp chili flakes (adjust to heat preference)
- 1 tbsp apple cider vinega
Whipped Feta
- 5 oz feta cheese
- ½ cup plain Greek yogurt
- 1 tbsp olive oil
- 1 small garlic clove
- Squeeze of lemon
Instructions
- Preheat oven to 425°F. Toss chicken with olive oil and spices. Place on a large sheet pan.
- Toss veggies with olive oil and salt and arrange around the chicken.
- Roast for 22–25 minutes, flipping chicken once for even browning.
- Meanwhile, warm honey + chili flakes + ACV in a small saucepan for 2–3 minutes (or microwave).
- Blend all whipped feta ingredients until smooth and fluffy. Be patient! This might take several minutes.
- Remove pan from oven, drizzle hot honey generously over chicken, return to oven for 5 more minutes.
- Serve chicken over whipped feta, spoon pan juices on top, finish with herbs if desired.
