Ingredients
- 1 lb ground lamb
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 2 cups baby spinach
- ½ tsp dried oregano
- ½ tsp cumin
- Salt + pepper to taste
- Juice of ½ lemon
- crumbled feta (if you do dairy)
- parsley and/or mint for garnish
- 1 cup pre-cooked rice or quinoa stirred in at the end or serve over cauliflower rice for a lighter option
