The ground lamb adds a rich, savory twist, and the fresh herbs + lemon brighten the whole thing up. Perfect for when you want something hearty but still fresh and light.

Ingredients

  • 1 lb ground lamb
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • ½ tsp dried oregano
  • ½ tsp cumin
  • Salt + pepper to taste
  • Juice of ½ lemon
  • crumbled feta (if you do dairy)
  • parsley and/or mint for garnish
  • 1 cup pre-cooked rice or quinoa stirred in at the end or serve over cauliflower rice for a lighter option
