BBQ Chicken & Pineapple Bowls

Juicy chicken bites get tossed in a tangy homemade red BBQ sauce, then paired with golden caramelized pineapple, creamy avocado, wild rice, pickled red onions, and fresh cilantro. Every bite hits sweet, savory, and spicy.

Ingredients

  • 2 large chicken breasts, cut into bite size pieces
  • fresh pineapple slices
  • salt
  • crushed red pepper flakes
  • avocado oil
  • pickled red onions
  • prepared wild rice
  • sliced avocado
  • chopped cilantro
For the Tangy Red BBQ Sauce
  • 1 1/2 cups apple cider vinegar
  • 1/2 cup sugar free ketchup
  • 2 tbsp coconut sugar
  • 1/2 tsp garlic powder
  • 1/3 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1 tsp salt

Instructions

  1. combine all ingredients for homemade bbq sauce in a saucepan and stir until it begins to boil and thicken. Let cool. Pour over chicken bites until chicken is covered in sauce. Let this marinate for 30 minutes or longer. Save any extra bbq sauce in a glass container.
  2. cook rice.
  3. heat a pan with avocado oil and add pineapple slices. Sprinkle with salt and a little crushed red pepper. Cook on each side for a few minutes until they become golden brown. Removed from pan and set aside.
  4. add chicken to the same pan and stir until cooked through. Do this on medium low heat so the bbq sauce doesn’t burn.
  5. layer bowls with rice, chicken, pineapple, avocado slices, and pickled red onions. sprinkle with chopped cilantro.
