Lemon Asparagus and Goat Cheese Pasta (GF)

This one’s creamy, cozy, and bright—everything I want in a summer pasta dish.

It’s simple, satisfying, and made with your tummy in mind!!!

Ingredients

  • 1 package gluten free fusilli pasta
  • avocado oil
  • 1 sweet onion, diced
  • 3 cloves garlic, minced
  • 1/2 can coconut cream
  • 8 oz log goat cheese
  • juice of 1 lemon
  • 1 bundle asparagus, cut into bite size pieces
  • chopped parsley and basil for garnish

Instructions

  1. drizzle a pan with avocado oil and add diced onion. When onion becomes translucent, add garlic and stir in for a minute.
  2. add coconut cream to pan with onion and garlic. When warm, stir in goat cheese. Once it becomes creamy, squeeze lemon juice in and continuously stir.
  3. prepare pasta according to package. During the last few minutes, add the asparagus pieces and drain everything together.
  4. add sauce to strained pasta and asparagus. Serve with fresh basil and parsley sprinkled on top.
