Street Corn Chicken Tacos
These flavorful tacos combine juicy, spiced chicken with sweet, charred corn, and creamy avocado- all wrapped in a warm, gluten free tortilla. It's a vibrant, craveable twist on classic street corn that's perfect for a quick weeknight dinner or summer gathering.
Ingredients
- 2 ears sweet corn, cut off the cob
- 2 tbsp paleo mayo
- 1/2 cup chopped cilantro
- Juice of 1 lime
- 1 chopped jalapeño
- 1 tbsp chili powder
- 1 tsp garlic salt
Chicken and Marinade
- 1 pound chicken breasts, cut into bite size pieces
- 1/4 cup avocado oil
- 1 tsp chili powder
- 1 tsp garlic powder
- salt/pepper to taste
- juice of 1 lime
For Serving
- corn tortillas
- sliced avocado
- chopped cilantro
- pickled red onions
Instructions
For the Street Corn
- stir all ingredients together in a bowl and set aside
For the Chicken and Marinade
- Place chicken in a bowl and stir in all other ingredients. Let it marinate for 30 minutes, then cook in a pan until chicken is cooked through.
To Serve
- Add corn and chicken to a tortilla and top with toppings of your choice- I recommend those listed above
