Street Corn Chicken Tacos

These flavorful tacos combine juicy, spiced chicken with sweet, charred corn, and creamy avocado- all wrapped in a warm, gluten free tortilla. It's a vibrant, craveable twist on classic street corn that's perfect for a quick weeknight dinner or summer gathering.

Ingredients

  • 2 ears sweet corn, cut off the cob
  • 2 tbsp paleo mayo
  • 1/2 cup chopped cilantro
  • Juice of 1 lime
  • 1 chopped jalapeño
  • 1 tbsp chili powder
  • 1 tsp garlic salt
Chicken and Marinade
  • 1 pound chicken breasts, cut into bite size pieces
  • 1/4 cup avocado oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • salt/pepper to taste
  • juice of 1 lime
For Serving
  • corn tortillas
  • sliced avocado
  • chopped cilantro
  • pickled red onions

Instructions

For the Street Corn
  1. stir all ingredients together in a bowl and set aside
For the Chicken and Marinade
  1. Place chicken in a bowl and stir in all other ingredients. Let it marinate for 30 minutes, then cook in a pan until chicken is cooked through.
To Serve
  1. Add corn and chicken to a tortilla and top with toppings of your choice- I recommend those listed above
