Fresh Peach and Chicken Salad
Juicy grilled chicken, sweet peaches, creamy avocado, and a tangy lemon-honey Dijon dressing—this salad is the perfect balance of sweet, savory, and satisfying. High in protein, full of fiber, and packed with summer flavor.
Ingredients
For the Salad Base
- 1 heart of romaine, chopped
- 1 ripe peach or nectarine, sliced (grilled or fresh)
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, chopped
- 1/4 cup red onion, thinly sliced
- 1 avocado, sliced
- 1 lb grilled or baked chicken breast
For the Dressing
- 3 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- Salt & pepper to taste
Instructions
- Season chicken with olive oil, salt, pepper, and a pinch of garlic powder. Grill or pan-sear for 4–5 minutes per side until golden and cooked through. Let rest, then slice.
- Combine all dressing ingredients in a small jar or bowl and whisk until smooth.
- Layer romaine on a large plate or bowl. Top with tomatoes, cucumbers, onion, avocado, and peaches. Add the sliced grilled chicken on top.
- Drizzle with dressing and toss just before serving.
