Salmon with Lemon Dill Dressing

Ingredients

Dressing
  • 1/4 cup extra virgin olive oil
  • juice of 1/2 a lemon
  • 2 tbsp chopped shallots
  • 2 tbsp chopped fresh dill
  • 2 tbsp honey
  • 2 tbsp stone ground mustard
  • salt/pepper to taste
Potatoes
  • 1 lb red potatoes, diced into 1/2 inch cubes
  • salt/pepper to taste
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 2 tbsp extra virgin olive oil
Salmon and Veggies
  • salmon filets
  • 1 bunch asparagus
  • salt/pepper to taste
  • extra virgin olive oil

Instructions

Dressing
  1. combine everything and set aside
Potatoes
  1. layer diced potatoes on a baking sheet and evenly coat with oil, salt, pepper, garlic powder and paprika.
  2. bake at 400° for 30 minutes
Salmon and Veggies
  1. add asparagus on one side of a baking sheet, and salmon on the other side. Coat everything with a drizzle of oil, salt and pepper. Bake at 400° for 10 minutes (just add to the oven for the last 10 minutes of the potatoes cooking)
  2. layer bowls with potatoes, asparagus and salmon. Spoon the lemon dill dressing over everything.
