Salmon with Lemon Dill Dressing
A light, flavorful dish made with fresh herbs and zesty citrus for the perfect healthy dinner. Packed with protein and omega-3s, this easy gluten-free recipe comes together quickly for a nourishing meal any night of the week.
Ingredients
Dressing
- 1/4 cup extra virgin olive oil
- juice of 1/2 a lemon
- 2 tbsp chopped shallots
- 2 tbsp chopped fresh dill
- 2 tbsp honey
- 2 tbsp stone ground mustard
- salt/pepper to taste
Potatoes
- 1 lb red potatoes, diced into 1/2 inch cubes
- salt/pepper to taste
- 1 tbsp garlic powder
- 1 tbsp paprika
- 2 tbsp extra virgin olive oil
Salmon and Veggies
- salmon filets
- 1 bunch asparagus
- salt/pepper to taste
- extra virgin olive oil
Instructions
Dressing
- combine everything and set aside
Potatoes
- layer diced potatoes on a baking sheet and evenly coat with oil, salt, pepper, garlic powder and paprika.
- bake at 400° for 30 minutes
Salmon and Veggies
- add asparagus on one side of a baking sheet, and salmon on the other side. Coat everything with a drizzle of oil, salt and pepper. Bake at 400° for 10 minutes (just add to the oven for the last 10 minutes of the potatoes cooking)
- layer bowls with potatoes, asparagus and salmon. Spoon the lemon dill dressing over everything.
