Egg Salad Lettuce Wraps

These egg salad wraps are a light and refreshing twist on the classic, made with creamy egg salad tucked into crisp lettuce leaves. Perfect for a protein-packed, low carb, and gluten free meal that’s easy to whip up for lunch, dinner or a quick snack.


Ingredients

  • 4 hard boiled eggs, peeled
  • 1 avocado, peeled
  • 1/2 red onion, peeled
  • Handful fresh chives
  • Handful fresh parsley
  • 1 tsp ground turmeric
  • 1 tsp garlic powder
  • Salt/pepper to taste
  • 1/4 cup paleo mayo
  • Lettuce for serving ( I used butter lettuce, romaine is also great)

Instructions

  1. chop eggs, avocado, red onion, chives, and parsley into tiny pieces. Mix and then add spices and mayo.
  2. add egg salad by the spoonful to your lettuce and form into a wrap. Eat a million- they’re delish!
