This salad is the perfect balance of sweet, savory and tangy flavors. Made with fresh seasonal peaches, tender steak, and a light homemade dressing, itβs a nutrient-packed gluten free salad that feels gourmet yet simple to make.
Ingredients
Steak Marinade
- 2 steak filets
- 1/2 cup Olive oil
- 1/4 cup Balsamic vinegar
- 1 tbsp Dijon mustard
- 3 cloves Garlic, minced
Honey Vinaigrette
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
- salt to taste
Salad
- Arugula greens
- 2 sliced peaches
- 1 avocado, diced
- handful cherry or grape tomatoes, halved
- crumbled bleu cheese
- crushed pecans
- sliced red onion
- marinated steaks
- vinaigrette dressing
Instructions
Steak Marinade
- whisk olive oil, balsamic vinegar, Dijon and garlic in a glass container. When combined, add steaks. Cover both sides and refrigerate for at least 30 minutes.
Honey Vinaigrette
- whiskey all ingredients in a small bowl and set aside.
Salad
- layer salads with arugula, peaches, avocado, tomatoes, bleu cheese, pecans, and red onion.
- after layering salad, cook steak to your preference in a pan or on the grill.
- top with vinaigrette and enjoy π
