Garlic Shrimp and Veggie Skillet

This 15 minute meal is a quick and healthy dinner loaded with fresh vegetables, juicy shrimp, and bold garlic flavor. Perfect for busy weeknights, this gluten free one pan meal is packed with protein, nutrients and vibrant color.


Ingredients

  • 1 lb shrimp, peeled & deveined
  • 2 tbsp olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 1 small bag baby spinach (about 5 oz)
  • Juice of 1 lemon
  • Salt & pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add shrimp, season with salt, pepper, and red pepper flakes, and cook 2–3 minutes until just turning pink. Remove and set aside.
  3. In the same skillet, add garlic and veggies. Sauté 4–5 minutes until just tender.
  4. Add spinach, stir until wilted (about 1 min).
  5. Return shrimp to the pan, squeeze lemon juice over everything, and toss to coat.
  6. Serve as-is, over cauliflower rice, or with quinoa for extra fiber.
