Ingredients

  • 1 lb ground beef (grass-fed if possible)
  • 1 medium zucchini, diced
  • 1 bell pepper (red, orange, or yellow), diced
  • 1 cup corn kernels (fresh from the cob if in season, or frozen)
  • 2 medium tomatoes, diced (or 1 cup cherry tomatoes, halved)
  • ½ small red onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt & pepper to taste
  • 2 tbsp olive oil or avocado oil
  • Optional: fresh basil or parsley for topping

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion and garlic, sauté 2 minutes until fragrant.
  2. Add ground beef, breaking it up with a wooden spoon. Cook until browned, 5–6 minutes. Season with salt, pepper, smoked paprika, and cumin.
  3. Stir in zucchini, bell pepper, and corn. Cook 5 minutes, stirring occasionally, until veggies are tender but still crisp.
  4. Add tomatoes and cook another 2–3 minutes, just until they soften and release juices.
  5. Taste and adjust seasoning. Remove from heat and top with fresh basil or parsley.

  1. Spoon over brown rice, quinoa, or polenta for a heartier meal.
