It’s a wholesome, gluten-free dinner that’s perfect for busy weeknights and brings all the bright, heart-healthy flavors of the Mediterranean to your table.
Ingredients
For the Chicken
- 1 lb chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil, divided
- 2 cloves garlic, minced
- Juice of 1 lemon + zest
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp cumin
- Salt & pepper, to taste
- Base: quinoa, brown rice, or cauliflower rice
- Veggies: diced cucumber, cherry tomatoes, roasted red pepper strips
- Extras: kalamata olives, shredded romaine, fresh parsley
- Sauce: quick tzatziki (1 cup Greek yogurt + 1/2 grated cucumber + garlic + lemon juice + dill) or hummus
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Season chicken with salt, pepper, paprika, oregano, cumin, lemon juice + zest.
- Add chicken to skillet and sear 4–5 minutes per side, until golden and cooked through. Remove and set aside.
- Assemble bowls: add your base, top with chicken, fresh cucumber, veggies, olives, and romaine. Finish with tzatziki or hummus.
