Honey Mustard Chicken Bowls
This is a crave worthy bowl with a mix of tender chicken, crisp veggies, and a sweet tangy homemade dressing. Made with wholesome, gluten free ingredients, they’re an easy, gut-friendly dinner that comes together in under 30 minutes.
Ingredients
- 1 lb chicken breast (cut into bite-sized cubes)
- 1 Tbsp olive oil (or avocado oil)
- Salt + pepper, to taste
- 1 cup wild rice (or quinoa, or cauliflower rice)
- 2 cups broccoli florets
- 2 medium carrots, sliced into thin matchsticks
- 1 avocado, sliced
Honey Mustard Sauce
- 3 Tbsp Dijon mustard
- 2 Tbsp raw honey
- 1 Tbsp apple cider vinegar
- 2 Tbsp olive oil
- 1 small garlic clove, grated or minced
- Pinch of salt
Instructions
- Cook the base → Start rice and cook according to package (if using pre-cooked packets, just reheat later).
- Mix the sauce → In a small bowl, whisk together Dijon, honey, apple cider vinegar, olive oil, garlic, and salt until smooth. Set aside.
- Cook chicken → Heat 1 Tbsp oil in a large skillet over medium heat. Season chicken cubes with salt + pepper, then sauté 6–8 minutes until golden and cooked through. Pour in half the honey mustard sauce, stir to coat, and let it bubble for 1–2 minutes until glossy. Remove from heat.
- Cook veggies → While chicken cooks, steam or roast broccoli (5–6 minutes until just tender). For a faster option, toss broccoli and carrots into the skillet for the last 3 minutes of chicken cooking.
- Assemble bowls → Divide rice among bowls. Top with honey mustard chicken, broccoli, carrots, avocado slices, and drizzle extra sauce over the top.
