Ingredients
- 1 ½ lbs boneless, skinless chicken breasts or thighs
- 4 cups chicken bone broth
- 4 cups corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 jalapeño, seeded and diced
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 ½ tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp sea salt (more to taste)
- ½ tsp black pepper
- 1 cup plain Greek yogurt or coconut milk
- Juice of 1 lime
- ½ cup fresh cilantro, chopped
- Crumbled cotija or feta cheese
- Avocado slices
- Extra lime wedges
Instructions
- Add chicken, broth, corn, bell pepper, jalapeño, onion, garlic, and all spices to the crockpot. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
- Remove chicken, shred, and return to crockpot.
- Stir in Greek yogurt (or coconut milk) and lime juice. Adjust seasoning to taste.
- Serve warm with toppings like cotija cheese, avocado, cilantro, or extra lime.
