Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • 4 cups chicken bone broth
  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 ½ tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp sea salt (more to taste)
  • ½ tsp black pepper
  • 1 cup plain Greek yogurt or coconut milk
  • Juice of 1 lime
  • ½ cup fresh cilantro, chopped
Optional Toppings
  • Crumbled cotija or feta cheese
  • Avocado slices
  • Extra lime wedges

Instructions

  1. Add chicken, broth, corn, bell pepper, jalapeño, onion, garlic, and all spices to the crockpot. Stir to combine.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  3. Remove chicken, shred, and return to crockpot.
  4. Stir in Greek yogurt (or coconut milk) and lime juice. Adjust seasoning to taste.
  5. Serve warm with toppings like cotija cheese, avocado, cilantro, or extra lime.
