Ingredients
- *1 ½ lbs boneless, skinless chicken breasts, sliced into thin strips
- *3 bell peppers (red, yellow, green), sliced
- *1 large red onion, thinly sliced
- *3 tbsp olive oil
- *Juice of 1 lime
- *3 cloves garlic, minced
- *1 tsp chili powder
- *1 tsp smoked paprika
- *1 tsp cumin
- *½ tsp oregano
- *½ tsp sea salt
- *¼ tsp black pepper
- *¼ tsp cayenne pepper (optional, for heat)
- *Fresh cilantro, chopped (for garnish)
- *Gluten-free tortillas (for serving)
- *Optional toppings: avocado, salsa, Greek yogurt or sour cream, shredded cheese
Instructions
- Preheat oven to 400°F (200°C) and line a large sheet pan with parchment.
- In a bowl, whisk together olive oil, lime juice, garlic, and all spices.
- Toss chicken, peppers, and onion in the marinade until coated. Spread evenly on the sheet pan.
- Roast for 20–22 minutes, stirring once halfway through, until chicken is cooked through (165°F internal temp) and veggies are tender.
- Garnish with fresh cilantro and serve with warm gluten-free tortillas and your favorite toppings.
