A quick, flavorful and gut-healthy dinner made with real, whole food ingredients. Juicy chicken, colorful peppers, and onions roast together on one pan for an easy, gluten-free meal packed with protein and fiber. Ingredients

  • *1 ½ lbs boneless, skinless chicken breasts, sliced into thin strips
  • *3 bell peppers (red, yellow, green), sliced
  • *1 large red onion, thinly sliced
  • *3 tbsp olive oil
  • *Juice of 1 lime
  • *3 cloves garlic, minced
  • *1 tsp chili powder
  • *1 tsp smoked paprika
  • *1 tsp cumin
  • *½ tsp oregano
  • *½ tsp sea salt
  • *¼ tsp black pepper
  • *¼ tsp cayenne pepper (optional, for heat)
  • *Fresh cilantro, chopped (for garnish)
  • *Gluten-free tortillas (for serving)
  • *Optional toppings: avocado, salsa, Greek yogurt or sour cream, shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C) and line a large sheet pan with parchment.
  2. In a bowl, whisk together olive oil, lime juice, garlic, and all spices.
  3. Toss chicken, peppers, and onion in the marinade until coated. Spread evenly on the sheet pan.
  4. Roast for 20–22 minutes, stirring once halfway through, until chicken is cooked through (165°F internal temp) and veggies are tender.
  5. Garnish with fresh cilantro and serve with warm gluten-free tortillas and your favorite toppings.
