Maple Dijon Chicken

A flavorful, one-pan dinner made with juicy chicken, roasted fall vegetables, and a sweet and savory maple Dijon glaze. It’s a gut-healthy, gluten-free recipe packed with real ingredients and perfect for a cozy, balanced weeknight meal.


Ingredients

  • 1 lb chicken thighs or breasts
  • 1 small sweet potato, diced
  • 1 cup Brussels sprouts, halved
  • 1 red onion, sliced
  • 1 apple, diced (Honeycrisp or Fuji work great)
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup
  • 2 tsp apple cider vinegar
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Sea salt + black pepper, to taste
  • Fresh thyme, for garnish (optional)

Instructions

  1. Preheat oven to 400°F and line a sheet pan with parchment paper.
  2. In a small bowl, whisk together olive oil, Dijon, maple syrup, apple cider vinegar, garlic powder, paprika, salt, and pepper.
  3. Add the chicken and vegetables to the sheet pan. Pour the maple-Dijon mixture over everything and toss to coat evenly.
  4. Roast for 25–30 minutes, flipping halfway through, until the chicken is cooked through and veggies are caramelized.
  5. Garnish with fresh thyme and an extra drizzle of maple if desired.
