Maple Dijon Chicken
A flavorful, one-pan dinner made with juicy chicken, roasted fall vegetables, and a sweet and savory maple Dijon glaze. It’s a gut-healthy, gluten-free recipe packed with real ingredients and perfect for a cozy, balanced weeknight meal.
Ingredients
- 1 lb chicken thighs or breasts
- 1 small sweet potato, diced
- 1 cup Brussels sprouts, halved
- 1 red onion, sliced
- 1 apple, diced (Honeycrisp or Fuji work great)
- 2 tbsp olive oil or avocado oil
- 1 tbsp Dijon mustard
- 1 tbsp pure maple syrup
- 2 tsp apple cider vinegar
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Sea salt + black pepper, to taste
- Fresh thyme, for garnish (optional)
Instructions
- Preheat oven to 400°F and line a sheet pan with parchment paper.
- In a small bowl, whisk together olive oil, Dijon, maple syrup, apple cider vinegar, garlic powder, paprika, salt, and pepper.
- Add the chicken and vegetables to the sheet pan. Pour the maple-Dijon mixture over everything and toss to coat evenly.
- Roast for 25–30 minutes, flipping halfway through, until the chicken is cooked through and veggies are caramelized.
- Garnish with fresh thyme and an extra drizzle of maple if desired.
