Ingredients
Quick Pickled Veggies
- 1 cucumber, sliced
- 2 carrots, peeled and shredded
- rice vinegar
- salt
Shrimp Bowls
- 1 lb shrimp, peeled and deveined
- salt/pepper
- 1 tsp chipotle powder
- avocado oil or EVOO
- 1/4 cup paleo mayo
- 1-2 tbsp GF sriracha
- white rice
- fresh parsley and/or cilantro, chopped for serving
- pickled red onions, for serving
Instructions
Quick Pickled Veggies
- place cucumbers and carrots into a container and pour rice vinegar over them until they are just covered. Now sprinkle liberally with salt. Cover veggies and shake so that everything is evenly coated. Refrigerate for at least 30 minutes
Shrimp Bowls
- cook rice
- stir mayo and sriracha. Set aside
- season shrimp with salt, pepper and chipotle powder. Drizzle a pan with oil and cook until shrimp is pink.
- layer bowls with rice, shrimp, pickled veggies, pickled red onions and cilantro/parsley. Drizzle with the sriracha mayo.
