Ingredients

For the Meatballs
  • 1 lb ground turkey or beef (grass-fed if possible)
  • 1 egg
  • 2 tbsp coconut aminos
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 green onion, finely chopped
  • 1/4 tsp black pepper
  • 1/2 tsp sea salt
  • 1/4 cup almond flour (binder)
Korean Style Sauce
  • 1/4 cup coconut or liquid aminos
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tsp chili paste (gochujang)
Bowls
  • White rice or cauliflower rice
  • Shredded carrots
  • Thinly sliced cucumber
  • Steamed or sautéed broccoli
  • Green onion, sliced
  • Sesame seeds
  • Optional: kimchi for gut-boosting probiotics

Instructions

  1. Make the meatballs: Preheat oven to 400°F. Mix meatball ingredients until combined. Roll into 1-inch balls and bake 15–18 minutes.
  2. Make the sauce: Whisk sauce ingredients in a small bowl. (if you want it to thicken a bit, heat in a sauce pan- I skip this to save time).
  3. Toss + assemble. Build bowls with rice, veggies, meatballs, sesame seeds, and green onion. Drizzle with the sauce.
