Ingredients
For the Meatballs
- 1 lb ground turkey or beef (grass-fed if possible)
- 1 egg
- 2 tbsp coconut aminos
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 green onion, finely chopped
- 1/4 tsp black pepper
- 1/2 tsp sea salt
- 1/4 cup almond flour (binder)
Korean Style Sauce
- 1/4 cup coconut or liquid aminos
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tsp chili paste (gochujang)
Bowls
- White rice or cauliflower rice
- Shredded carrots
- Thinly sliced cucumber
- Steamed or sautéed broccoli
- Green onion, sliced
- Sesame seeds
- Optional: kimchi for gut-boosting probiotics
Instructions
- Make the meatballs: Preheat oven to 400°F. Mix meatball ingredients until combined. Roll into 1-inch balls and bake 15–18 minutes.
- Make the sauce: Whisk sauce ingredients in a small bowl. (if you want it to thicken a bit, heat in a sauce pan- I skip this to save time).
- Toss + assemble. Build bowls with rice, veggies, meatballs, sesame seeds, and green onion. Drizzle with the sauce.
