Grilled Steak Bowl with Creamy Herb Sauce & Roasted Zucchini

Ingredients
For the Bowl
- 1 lb grass-fed steak (flank, skirt, or sirloin)
- 2 medium zucchini, sliced into planks
- 1 sweet potato, cubed
- 1 cup cooked rice (or cauliflower rice)
- 1 tbsp olive oil or avocado oil
- Sea salt & pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Mixed greens or arugula (optional for base)
For the Creamy Herb Sauce
- 1/2 cup plain skyr or Greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, grated
- 2 tbsp chopped parsley
- 2 tbsp chopped chives or green onion
- Pinch sea salt + pepper
Instructions
- Toss potato cubes and zucchini planks with oil, salt, pepper, garlic powder & smoked paprika. Roast at 425°F for 20–22 minutes.
- Season steak generously with salt & pepper. Grill or fry 4–5 minutes per side for medium. Rest 5–10 minutes, then slice against the grain.
- Make the creamy herb sauce. Whisk all sauce ingredients until creamy. Taste & adjust salt/lemon.
- Assemble bowls: Layer rice, greens, roasted sweet potato, grilled zucchini & sliced steak.
- Drizzle creamy herb sauce over top.
