Grilled Steak Bowl with Creamy Herb Sauce & Roasted Zucchini

Ingredients

For the Bowl
  • 1 lb grass-fed steak (flank, skirt, or sirloin)
  • 2 medium zucchini, sliced into planks
  • 1 sweet potato, cubed
  • 1 cup cooked rice (or cauliflower rice)
  • 1 tbsp olive oil or avocado oil
  • Sea salt & pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Mixed greens or arugula (optional for base)
For the Creamy Herb Sauce
  • 1/2 cup plain skyr or Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, grated
  • 2 tbsp chopped parsley
  • 2 tbsp chopped chives or green onion
  • Pinch sea salt + pepper

Instructions

  1. Toss potato cubes and zucchini planks with oil, salt, pepper, garlic powder & smoked paprika. Roast at 425°F for 20–22 minutes.
  2. Season steak generously with salt & pepper. Grill or fry 4–5 minutes per side for medium. Rest 5–10 minutes, then slice against the grain.
  3. Make the creamy herb sauce. Whisk all sauce ingredients until creamy. Taste & adjust salt/lemon.
  4. Assemble bowls: Layer rice, greens, roasted sweet potato, grilled zucchini & sliced steak.
  5. Drizzle creamy herb sauce over top.
