Creamy Butternut Squash Skillet

This dish is a healthy one pan dinner made with real, whole food ingredients. Naturally gluten-free and packed with protein, fiber and comforting winter flavors, it’s an easy weeknight meal that delivers cozy comfort food without heavy or processed ingredients.


Ingredients

For the Skillet
  • 1 lb sausage (I’m using Apple Gouda….be sure to analyze for clean ingredients)
  • 1 tbsp olive oil or avocado oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 3 cups butternut squash, peeled + diced small
  • 1 cup sliced mushrooms
  • 1 cup chopped kale or spinach
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried sage
  • ½ tsp sea salt (adjust to taste)
  • Black pepper
Creamy Element
  • ½ cup coconut milk or ⅓ cup Greek yogurt
  • 1 tsp Dijon mustard
To Serve
  • Fresh parsley

Instructions

  1. Heat a large skillet over medium. Add sausage and cook until browned. Remove to a plate.
  2. In the same skillet, add oil, onion, and mushrooms. Cook 4–5 minutes. Add garlic and cook 1 minute more.
  3. Stir in squash, smoked paprika, thyme, sage, salt, and pepper. Cook 2–3 minutes to coat everything in flavor.
  4. Add ½ cup water or broth. Cover and simmer 10–12 minutes, until squash is fork-tender.
  5. Stir in coconut milk (or Greek yogurt) and Dijon. Add the sausage back in. Fold in the kale/spinach and let it wilt. Adjust seasoning.
  6. Garnish with parsley.
