Creamy Butternut Squash Skillet
This dish is a healthy one pan dinner made with real, whole food ingredients. Naturally gluten-free and packed with protein, fiber and comforting winter flavors, it’s an easy weeknight meal that delivers cozy comfort food without heavy or processed ingredients.
Ingredients
For the Skillet
- 1 lb sausage (I’m using Apple Gouda….be sure to analyze for clean ingredients)
- 1 tbsp olive oil or avocado oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 3 cups butternut squash, peeled + diced small
- 1 cup sliced mushrooms
- 1 cup chopped kale or spinach
- 1 tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp dried sage
- ½ tsp sea salt (adjust to taste)
- Black pepper
Creamy Element
- ½ cup coconut milk or ⅓ cup Greek yogurt
- 1 tsp Dijon mustard
To Serve
- Fresh parsley
Instructions
- Heat a large skillet over medium. Add sausage and cook until browned. Remove to a plate.
- In the same skillet, add oil, onion, and mushrooms. Cook 4–5 minutes. Add garlic and cook 1 minute more.
- Stir in squash, smoked paprika, thyme, sage, salt, and pepper. Cook 2–3 minutes to coat everything in flavor.
- Add ½ cup water or broth. Cover and simmer 10–12 minutes, until squash is fork-tender.
- Stir in coconut milk (or Greek yogurt) and Dijon. Add the sausage back in. Fold in the kale/spinach and let it wilt. Adjust seasoning.
- Garnish with parsley.
