Ingredients

Beef
  • 1 ½ – 2 lbs beef tips or stew meat
  • 1 ½ tsp sea salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp olive oil or avocado oil
Veggies and Aromatics
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced (cremini or baby bella)
  • 2 medium carrots, diced
  • 1 parsnip, diced
  • 1 tbsp tomato paste
Liquid + Herbs
  • 2 cups beef bone broth
  • 1 tbsp Worcestershire
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt + pepper to taste
To Finish
  • ⅓ cup coconut milk or ¼ cup Greek yogurt
  • Fresh parsley, chopped
  • Optional: squeeze of lemon to brighten
Serving Options
  • Mashed potatoes (cauliflower mash works great)
  • Gluten-free noodles

Instructions

  1. Pat beef tips dry and season with salt, pepper, and smoked paprika.
  2. Heat a large pot or Dutch oven over medium-high with the oil. Add beef tips and sear on all sides until browned (don’t overcrowd). Remove and set aside.
  3. In the same pot, add onion, carrots, and parsnip. Sauté 5–6 minutes until softened. Add mushrooms and cook until they release their liquid.
  4. Add garlic + tomato paste, stirring 1 minute until fragrant.
  5. Add broth, Worcestershire, thyme, rosemary, bay leaf, and the beef tips back in.
  6. Stir, cover, and bring to a gentle simmer.
  7. Simmer 45–60 minutes, stirring occasionally, until beef is tender and gravy has reduced.
  8. Remove bay leaf. Stir in coconut milk or Greek yogurt for a silky finish. Taste and adjust salt/pepper — add a squeeze of lemon.
  9. Spoon over mashed potatoes, cauliflower mash, or GF noodles. Top with fresh parsley.
